Cooking Class

Our first cooking class will be held on March 26th at 7 pm at Waterways conference room. We're hoping to help others deal with this 'new' economy we have, learning to live within our budget, make do with what we have, save while shopping, and over all, to be content with what this day is holding for us. On a cooking note, it's so fun to see how to stretch the food. Literally, there are ways to make it stretch... like rubber band! What you think will cover so much, suddenly, by adding some inexpensive ingredients, you see it covers much more! This morning I was making scrambled eggs for the family. Normally I use 15 eggs.. today, I wanted to try to cut down. I put 8 eggs in the bowl, added milk, salt, pepper, garlic and onion powder. Mixing it well, I poured it into the pan in which I had warmed up the last of a turkey breast ( about 1/2 cup) and about 1 cup of leftover rice. After cooking it up till the eggs were firm, I spread some grated cheese on top and served with some homemade english muffin bread. Everyone thought it was great! no one noticed the rice! Yes!

Get creative! "Think outside the 'cookbook'. You'll be surprised to find that so many healthy foods can be added into your normal menu to make them much more reasonably priced - and often much better tasting!

Why wait till the funeral?

I don't understand why we are so prone to wait until some is either dying or dead before we share with them the things that they have done to touch our lives. With the wonderful creation of the caring bridge site we have recently had a number of friends in dire situations. People have gotten on their site and written all the many ways the friend has made a difference to the writter. It's been an amazing thing to read the hundreds of entries... and to learn SO much about the person. Through it all my mind races with the question: "Why wait?" So.. today I want to take the time to jot a note to someone who is special to me, who I admire, or in whom I have seen an act or attitude that I admire, just to tell them that in a world where there is so much bad, I see good - in them. I know that in my life there are times when a kind word from someone would be wonderful - but instead of just waiting for it, I'm out to start a new fad... be vocal of the kindnesses I see in others! I have found it fun to watch the face of someone when you unexpectingly tell them what is really in your heart. There is so much good in so many people, and yet most of us never stop to tell the other person 'thank you, I liked that, or you did a good job, or your are a wonderful friend'
Let's hear from you after you spend a few days thinking of who you admire, and why, and what their reaction is once you tell them! Have a great time doing it!
